Tarascos is the best example of a vegetarian burrito taqueria in the Silver Lake/ Echo Park area. Nice outdoor seating, ample parking and complimentary chips and salsa make it a great place to hang out. They have several types of veggie burritos, including a San Diego style California Burrito, so read the menu carefully before ordering. Their salsa is exquisite, particularly their chile de arbol salsa. The habanero is as hot as you’d expect from one of the spiciest peppers. Tomatillo is mild. Their house salsa fresca tastes like they’ve been working on the recipe for decades. They have whole black beans or re-fried pinto beans. Open until 3 AM on weekends.

Restaurant Owner Offers Tamale Making Class

LOS ANGELES — Making tamales during the holidays has always been a family tradition for Tarascos owner Antonio Garcia. Garcia says the recipe isn’t difficult, just time-consuming.

“In our family, this actually takes two days, two business days,” Garcia said said. “It’s the most fun. The more people you have, it is also easier.”

Tamale-making classes are purposely kept small, allowing students to get hands-on instruction on the traditional steps of making tamales.

First, Garcia demonstrates how to mix the previously prepared masa (dough). Next, patrons receive lessons on dipping the corn husks in water and spreading the masa correctly along the husk.

Students then fill the tamale with their choice of fresh shredded chicken, Mexican cheese, colorful raw veggies and red or green chile.

Carefully folding the tamale takes some practice, but Garcia helps the students every step of the way. When students have folded and labeled their creations, they can leave them with Tarascos for pick-up later, or take them home to be steamed.

“The hardest part was trying to wrap them, mine always came out really small and sort of oddly shaped,” said new student Melinda Green of West Hollywood.

Tamale Making 101 is not just about bringing fresh tamales home. It’s about bringing people together.

“Now you can (not) only make tamales, but you can also enjoy being around the people you love, the people that you want to be around this holiday season.”

“It’s like a communal event,” said Wayne Selway of Los Angeles.

One lesson that is crucial to delivering delicious tamales? Leave the Scrooge attitude at home.

Families and friends that gather to prepare tamales must be in good spirits, or they will turn out pintos, which is Spanish for raw.

“(Tamales) cook sometimes more flat, sometimes they cook in the middle kind of raw, so you want to make sure everybody is happy and having a good time making your tamales tonight,” Garcia said.

Tarascos Mexican Restaurant is a small Southern/West Coast Mexican restaurant that caters to the trendy Silver Lake community and thus serves up the Southern and Pacific Mexican standards. Tarascos thrives to stand out from the myriad of other Mexican grub shacks along Sunset Blvd., with the features of a traditional table-service restaurant while maintaining the charm of a ground-roots Mexican food stand. Patrons choosing to dine-in at Tarascos shouldn’t expect a quick snack, but an honest meal targeted to quench hunger.

The food itself is traditional Mexican cuisine from the state of Michoacán, providing a regional twist to standard dishes – for example, those of untrained taste buds may be taken aback by the addition of pineapple in the carne al pastor. The main attraction here would be the ambiance found in Tarascos itself. It’s a charming place with an ability to cater to groups, families, and to-go diners without a hitch. Table service is attentive for the most part – that being when they aren’t being bogged down by more needy customers, which they still serve with a smile and professionalism.

Online communities tend to exaggerate the cuisine found at Tarasco’s, thus making the experience of first-timers less stellar than anticipated. Tarasco’s is a charming little restaurant that serves regional favorites of Southern and West Coastal Mexico not a gourmet entrée destination. In the everyday patrons’ eyes, it’s fine just the way it is.

The food is regional Southern/Pacific Coast Mexican and thus is prepared in the traditional manner of that region.
The food is slightly pricier than the average taco shack, but Tarascos isn’t a burrito truck. Also, it’s more than reasonably priced when compared to its neighbors.
Oddly enough, they offer a traditional Thanksgiving Turkey Dinner [starting at $99.00]

Tarascos’ authentic recipe is easy to make, easy to eat, and easy to fit inside overall bib pockets. Students will finish the class with three tamales they can eat on site or take home to consume later.

Tortilla and Salsa Making Classes

Salsa

During the hands-on, two-hour class, gastronomic guests learn how to skillfully craft a piquant salsa and mix corn and flour tortilla dough from scratch, circularizing creations so they resemble a Mexican staple rather than well-meaning but misshapen play-doh. Students steep themselves in authentic cooking methods by mixing dough and salsa in a sturdy stone molcajete and baking their tortillas on a comal. The salsa, based on an esteemed family recipe, blends roasted tomatillos and serrano peppers with garlic, cilantro, and oregano to create a chunky, verdant tortilla-garment. Tarascos’ authentic recipes are easy to make, easy to eat, and easy to fit inside overall-bib pockets. Students will finish the class with 12 tortillas and salsa they can eat on-site or take home to consume later.
